FFwD: Corn Pancakes

In a bout of forethought, in trying to complete FFwD recipes before being separated from all-things-kitchen, I made this week's recipe, Corn Pancakes (pg 337 of Around My French Table), two weeks ago. Unfortunately, my pre-planning did not extend to writing up my post about the pancakes at that time, so the memory is pretty fuzzy as I type this now. Also, the pics were uploaded onto my desktop, which is still with my husband in Texas. I am now at my mother's in Brooklyn, so no photos for you! Don't worry--you're not missing much. Just imagine yellow pancakes.

I thought that this sounded like a delightful recipe, and figured they'd be a great way to trick my son into eating corn. Not that he's missing a world of nutrition by not eating corn, but any time that I can get him to eat anything new, it makes me happy.

For some reason, I thought that the corn would be kept whole, and dot the pancakes. That is not correct. Canned corn is pureed with the other ingredients to make batter. Hot off the griddle, they tasted fine. Nothing special, but fine. I followed the instructions to move the pancakes to a warm oven as they were made.

I finished flipping my last pancake and retrieved its mates from the oven. The texture had completely changed. I can't remember exactly what was wrong, since I stopped after two bites, but I think they'd turned gummy and dense. I gave one to Charlie and he gagged on it. For about three minutes. He's very dramatic.

He and I ate french toast for dinner. Matt insisted upon eating the pancakes--ALL the pancakes--with spinach and over easy eggs, even though he didn't like them, because he didn't want to waste them. He's mental.

I had a hard time with most of June's recipes. July looks like it's shaping up to be exponentially more delicious. Whew!

  1. Okay, I am glad that I am not the only one who wasn't lovin' on these, but I figured it was something I did. I threw out the leftovers...

  3. Doctor up I did. I added some cayenne pepper and grated Italian cheese to half of the batter.

    I actually
    liked both versions, but maybe the addition of sour cream helped. Sorry you did not enjoy them.

  4. I didn't even try to keep them warm in the oven as I expected the crispy edges to disappear... looks like they did and anything good about these pancakes! I'm so sorry for you that you didn't like them. At least it was a cheap easy recipe. Nothing worse than buying lots of ingredients and working really hard to loath the entire experience!

  6. my husband does the exact same thing! :) I didnt try to keep them warm in the oven, since i wouldnt do that with regular pancakes.. stacking them on each other kept them warm enough... :) Good job though!

  7. I almost added green chiles to the batter. They really needed something. We won't be making these again, either, but I've been surprised before! Best of luck with your move.

  8. I always use a tortilla warmer to keep my pancakes warm. I couldn't justify turning on the oven. I just made them and threw them at kids when they were done!

  15. I made these with fresh corn, and it sounds like a wise move. I DID like them (though am with you on most of June), but mine were chunky, as you were hoping for. Hope you are enjoying your family visit.

  16. Can't say that June was my favorite month either, but I did unexpectedly like these. Here's hoping for some winners in July. In fact, I have the first recipe on tonight's menu, we'll see how it goes.

  17. Ohhh, I wanted these corn pancakes to work for everyone but it doesn't appear that it was happening for you. I love that guy who doesn't want to waste food. Thaty's so funny (and, great). This moving business is not easy and, although I know you are used to it, I feel your pain and wish you good luck. Safe travels and I look forward to hearing about your adventures ahead.
