FFwD Rewind: Pancetta Green Beans

I hate cooked green beans. They are my most despised vegetable. Raw, they're fine, but cooked, the way they squeak on my teeth skeeves me out. I want to say that outright, because my distaste for Pancetta Green Beans (pg 333) should really bear no weight.
This tastes like bacon on green beans. If you like those two things, dandy. Matt liked it. I don't have much else to say about it. I saw some green beans at the farmer's market, so figured I'd give it a shot, in the spirit of ticking off all the FFwD recipes I missed. Ah, well.

Conclusion: Disliked, but it would have taken a miracle for me to enjoy green beans.

  1. That is so funny you hate green beans! I think you might want to try to experiment with a different cooking technique if you ever make them again- Greeks make beans particularly well- soft, no squeaking, but not mushy ( unless you overcook). Consider simmering them first in water till cooked the way you would normally then serve them- but then stewing them some more with diced tomatoes, onions, lemon, salt, pepper, a pinch of cinnamon, cumin, a couple TB olive oil, some herbs of your choice and plenty of chopped fresh parsley. Cook them until the squeak is gone ( 20 mins or more)! This green bean stew mixes particularly well with add-ins like chickpeas, olives, mushrooms, etc. and a side of roasted potatoes. Top with some feta- I promise its squeakless and good!

  5. I think we all have those odd foods which we hate. Sometimes our tastes change over time (I hated eggplant as a kid but now I love it) and sometimes not (I still can't stand white chocolate). Sorry you didn't like this one but I wouldn't lose much sleep over it.

  6. I think I'd have texture issues if I didn't have the terrible habit of shoveling food down my piehole without bothering to taste it. On a completely different note the ravioli behind the green beans looks quite appetizing.
