Beef Braised in Beer (pg 397 of How to Eat) was different than any other stew I've tried, so I thought it was worth a shot. A lot of prunes soak in stout (I used Guinness, due to its awesomeness) for two hours. Cook some onions and carrots, brown some floured meat, and throw everything into a Dutch oven to cook at low temp for 3 hours.

Conclusion: Just okay. I bumped it up from dislike, because the broth was very good.
Do you dislike stew meat or the fact that stewed meat tends to be super tender? Just curious.
ReplyDeleteI think part of it is that I just don't like stew meat. It always tastes unpleasantly metallic to me. Also, I think it throws me when people define it as tender. When I think of tender beef, I'm thinking of a juicy, butter-soft, red filet mignon. Not gray stringy meat that falls apart. I dunno.
DeleteI'm the opposite. I love stew. It's one of the only ways I'll eat beef because I'm not much of a meat eater.

DeleteThis is a little weird. I just made Dorie's beef stew recipe (the Go-To Beef Daube) and was starting to write the post for it, which basically starts off exactly as yours does! I'm just not a huge fan of beef stew, no idea why. Since everyone else seems to love it I keep thinking that I'll change my mind one of these days. Hasn't happened yet. Now I think I need to rewrite my post a little just so it doesn't look like I'm copying yours. Either that or just wait a bit longer before publishing it:-)

DeleteI love stew, and I am wondering if maybe you might want to try a different cut of meat? I.e, not "stew meat" per se? Maybe a nice lamb stew, mm? Or bison! Just a thought.
ReplyDeleteYou might be right, Trix. The lamb stew we made for FFwD a few weeks back was the tastiest stew I've ever had, and the fact that lamb is my favorite meat ever probably had something to do with that. I've never even had bison. That must be remedied.
